Here's a quick question, friends: I recently purchased more butter than I can use in a reasonable time and was curious to know if it can be safely frozen without diminishing its qualities. The butter is unsalted. Thanks for your replies...

Sticks or blocks of butter are easiest to freeze. Simply wrap aluminum foil around the foil or wax wrapper already in place. Then freeze.
Unsalted butter will freeze safely for a year while salted butter will keep for six months.
You might want to put it into a tupper ware container to prevent "freezer taste and smell".

I freeze mine all the time. Doesn't require anything special. Just pop it in the freezer. Didn't know you were supposed to do anything else.

Thanks, friends. I guess one reason I wasn't sure is that I haven't purchased butter in a long time. Being health conscious I've been using Smart Balance for years. Thought I'd treat myself to the real taste of butter for once. There goes my cholesterol level .

I freeze butter fairly often when it goes on sale for a good price, eg before holiday baking, etc. I haven't ever kept it for more than 2-3 mos. but it did fine for that length of time. I wrapped it twice in foil.

Why wrap? We always freeze the butter when we buy it and it is the same when we take it out and use it as it is if we use it right away, have never wrapped butter before putting it in the freezer - just toss it in.

I always freeze it right in the box. I have five pounds in there right now ($1.48/lb. last week!)

I also freeze butter all the time without any special wrapping. I never noticed a difference in taste.

You may find that real butter will not affect cholesterol levels at all. Obviously use in moderation as in all things.
Spent some time with a Professor and Dean of Nutrition at a famous University who showed me a chart of heart attacks in USA from 1900 to 1990+ compared with use of maragine in the USA. Chart for maragine started after WW One when maragine was introduced as measure to save fats for the war effort. Heart attacks in the population which had been flat line prior to 1920 marched up and basically matched the maragine useage line step by step. My wife is a Ph.D in Nutrition and Dietitian and we use butter in our home.
