Fall off the bone is not a real smooked rib!!! A real smoked rib is cooked over indirect heat with smoke, the flavor of your choice. This is only my opinion though.

Remove membrane, rub with a rub you like, indirect heat at 225 for appx 5 hours..I leave bone down the whole time and put a pan of beer under them and mop with wickers every now and then..

I have found success with sealing the the ribs in foil. I make a boat out of foil place the ribs then pour regular coke or pepsi over the ribs. Seal foil put on low heat an hour or so. They will come out very tender. I then add some hickory wood chips once the smoke starts I put ribs on the grill bone side up add my sauce then flip to meaty side add more sauce. I don't have it timed when to turn just keep low heat and watch so they don't burn.
