Has anyone double towed (5th wheel + Trailer) in Canada and Alaska? Were there any problems?

Your biggest problem might be getting through British Columbia, which you must do to get to Alaska. Double-towing is not legal in B.C.

You are OK in Alberta but as Sue has already pointed out you could have a problem in BC and it would not just be a ticket, they will make you drop your trailer and park it until you can return and take it out of the province legally

Double towing in Alaska is illegal, unless certain requirements are met.
Alaska Braking Law
See 13AAC 04.205(3)(e), regardig towed vehicle weight and braking requirements.
I don't think a Pickup with a fiver, and towing a trailer will meet these requirements.

Why would I have a hard time meeting those requirements? I double tow a lot and would have NO problem stopping in less than 40 feet at 20mph.

Does your towing setup match or exceed these requirements?

Per 13AAC 04.205(3)(e)
"No person may operate a motor vehicle on the roadway towing more than one vehicle unless the towing vehicle weighs more than 15,000 pounds, has three or more axles, and is equipped with an air brake system for both the towing and towed vehicles."

Does your tow vehicle weigh more than 15,000 pounds? Does it have three or more axles? Do you have air brakes on both the tow vehicle and the towed vehicles?
If your answer to any one of these questions is NO, then according to the Alaska State Laws you cannot double tow.
I didn't write the law, I only reported what it says.

That is an OFFICIAL Ministry of Transport document.

i asked the guys at the state scale coming into alaska about double towing and i have a cdl with all the endorsements but it is by special premit only in the state and they do not give out from the canadian boarder to the richardson highway and the highway goes by the scale and no way around and he said quote if i see you i will make you unhook and write you a very expensive ticket and call for a wrecker to get it off of highway.
