fresh out of the garden....

Fresh Green Beans and New Potatoes

(use your own amounts, adjust ingredients to your taste)
Trim green beans
wash and quarter small new potatoes (mine were golf ball size)
bring to a boil in just enough water to cover.
When potatoes are almost cooked thru, drain and set aside. Empty water
cook about a 1/3 lb bacon (I use turkey bacon) in the pan.
Remove bacon to a paper towel. If using real bacon, remove most of grease.
Add green beans and potatoes back to pan. Add some butter (I use spray butter) and saute until they are lightly beginning to brown.
Remove from heat.
Add fresh snipped herbs. I use fresh dill, parsley, and green onions.
Add a tbsp of mayo and a tsp of mustard, and lots of fresh cracked black pepper. Stir well.
Place in serving dish and crumble cooked bacon over top.
Serve.

We like green beans and new potatoes too but we do them differently. Cook the beans, and the potatoes, but not together. Make a thin white sauce and add the beans, potatoes, and additional butter....oh, so good.

I put the taters and green beans in a pressure cooker with some small onions, 10-12 minutes under pressure and YUM! Just add butter, salt and pepper.

DW adds ham to the beans and potatoes and onion. Very good.

might want to change the mayo to light mayo. Maybe less turkey bacon on top.

Sounds great! Did you see on Oprah where they showed us that real bacon was actually healthier and better for us than turkey bacon?? Who knew? And it really irritated me because real bacon was one thing I really hated giving up in my quest to lose weight and become healthier. I really missed my BLT with home grown tomatoes! Now I can have one again. I love having another side dish. Thanks for sharing.


Both retired. Travel with Nicky the Schnoodle. Son graduated and is teaching high school math. We notice he still prefers to use our checkbook! We still love our 2006 34' Allegro Bay XB and have 25,000+ miles on her.

This was the rational:

Who's watching Oprah right now?

They are talking about different food choices.

Regular bacon and turkey bacon has the same amount of calories and fat but turkey bacon has more sodium so they are saying regular bacon is the better choice.
