The Dometic frig thst came with my camper has a thermostat adjustible from 1-7, but I need to know which is cooler...the higher number (7) or the lower number (1). I guess you can tell I don't use it very often.

On our Dometic, the higher number is COLDER. But as milo suggested, your manual is your guide.
If you don't have one, Dometic website has copies of the manuals.

Can't give you an accurate answer to your question but can suggest a hopefully helpful hint for future accurate monitoring of your refrigerator interior temperature.
Go online and order a basic weather monitoring system such as those from La Crosse Technology that has a small, battery operated remote sensor (or two) that gives you temperature readings and place one of these sensors inside your refrigerator so you can determine the actual temperature (digitally displayed) without opening the fridge door. The one I have cost about $20 with one remote (another remote for outside temp monitoring additional $12) has made my monitoring of refrigerator temperature so much more easier.

I have the manual, but it says the settings are adjustable between "Max" and "Off No mention of the numbers. (Go figure!) I'm on the move right now in Montana, and the outside temperature varies so dreastically I can't get a good idea of what is going on.

That's what I was using, except an Acu-Rite instead of a LaCrosse. Now I'm using a "Chaney Wireless Refrigerator/Freezer Thermometer" that I bought on eBay for $28 incl. shipping.

Thanks for the link to a better unit than I was using. Will consider upgrading.

Once stabilized you can raise or lower it a notch and see what happens (you will need a thermometer to measure that accurately)
FWIW, my Dometic has a range of 1 to 5, with 5 being the coldest. I run it at "4".
