Al: Pretty hard to beat Survival Chili made with several kinds of meat plus a nice ham bone with lots of meat attached! I even throw one into a pot of Venison Beer Stew: both taste better with the ham bone. Shortie

Most grocery stores sell "15 bean soup mix". It's several different types of dried beans and a packet of soup base. Look for it in your local store in the aisle that sends rice and beans. Directions are on the bag - but basically you soak the beans overnight then cook them all day in a pot of water with the ham bone. It's wonderful!

Boil surrounded with pinto beans and onions, I thought that's what everyone did.

I will boil them until the meat falls off of them. Then I take bones out scaping all meat off. When stock has cooled, I put beans in a pot,cover them with stock, soak over night then make baked maple beans. They come out so sweet and tender. The RVers will come a sniffing so make lots.

BAKED MAPLE BEANS
4 cups white beans
12 cups ham bone broth or just water
5 slices bacon cut into pieces
1 good sized onion
1 1/2 cups maple syrup
1/2 cup chili sauce
1tsp salt
1tsp dry mustard
Soak beans over night in cold broth. Next day drain broth and heat.
place half the beans in a crockpot, or what ever you have.put bacon,onion and remaining beans in a large bowl and combine with haft cup of maple syrup, chili sauce and mustard, pour over beans in the crockpot and mix.
Add boiling broth to beans to just cover them and bake covered at 300* for four hrs or until beans are soft. add remainder of maple syrup as needed to keep beans moist,(more syrup if needed).
Serves 10 to 12. Great the next day also.
Make sure every body has some to keep on the same playing field if you know what I mean.

anazasi beans for me, but then I've never met a bean I didn't like. The baked maple beans sound great so it got printed off to try the next time I make a pot of beans. Lennet
