Watts = Current x voltage
The voltage output is 120 and the watts are 7500 Divide 7500/120= 62.5 Amps

I cannot imagine they would put a 7500w generator in a 30 amp RV.

It may well NOT be a misprint. From my experience, it was not uncommon for a coach of this year series to only have a 30A service, even though it has a 7.5Kw diesel generator.
The key factor is that the RV had a good EMS system, which will monitor the loads, and switch off (shed) certain items, as needed, to prevent pulling current in excess of the 30A limit.
A case in point are the Discovery DP's prior to the 2002 version, which was the first to have a true 50A system.
Given my 'druthers', I would opt for a 50A system from the factory, rather than trying to kludge a 30A system into a 50A system.

I note your base is Nevada. 30amp service will operate ONE air roof airconditioner at a time. Some rigs have auto switches that shift front and rear air on in sequence. This is less than adequate when the temp is over 100. 50amps means both roof airs can operate at the same time, or the single basement air unit can operate at 50amps. In the past, with previous rigs I found summer in Las Vegas, LA, along the Colorado River just too hot. With 50amps it is hot but manageable.

I have 50 amp service, but only 30 amps at home.
When hooked to 30 amps I can run both of my 15k rooftops at the same time for hours on end without blowing a breaker. (No energy management or anything fancy.) Now, if I run my 110 volt fridge or charge the batteries I will blow the 30 amp breaker in the house.

My '95 Coachmen is a 30 amp RV with a 7KW generator. On shore power, there's a selector switch for running the front or rear AC. When the genny is running, both AC's can run at the same time.

Not so, at least on a Winnie. My 30 amp runs both AC's at the same time...no shifting.

The 7500W Onan is a Diesel powered generator.
And at that year it was about the only size they made for a RV.
Back then some 30 AMP DP came with a 6.5W LP generator.
Now Cummins Onan makes several sizes:

Honestly you are better off avoiding everything discussed above and just find a 50 amp coach. Why screw around? Especially in AZ where you know it will be hot.
Used coaches are plentiful.
