We're going to a small group rally with friends next week. Their evening meals are going to potluck, and although I know we don't have to eat every meal with them, we enjoy the fellowship!

I don't know how much, and what type dishes to plan to take...I don't want to take a meat dish everytime, but not just side dishes all the time either. I think I try to over analyze everything! What are your suggestions/ideas?

NEVER EVER BRING MEAT!!!!!! I LOVE MEAT AND POTATOES but at the potluck you ladies bring what your MOM taught you we never get those dishes!!! Seems at potluck you ladys have these secret dishes that your family takes for (not that again) keep it simple and all will love ya for it!!! It really is a 200.00 dollar meal ya can not get anywhere else but our POTLUCKS !!!! just my 2 cents rvtommy

This one I got from this site but I use a can of chili in place of the chili seasoning and tomato sauce.

Chili Dog Casserole

2 lbs ground beef
1 package of chili season mix
1 small can tomato sauce
1 package hot dogs
shredded cheese
sour cream
bottled taco sauce
chopped onion

Brown ground beef,drain,add tomato sauce and chili seasoning package.Spread in bottom of a 9 inch cake pan.Cut hotdogs in rounds and layer over ground beef mixture.Top with cheese and cook in 350 oven for 10 minutues or until cheese melts. Top with onions,sour cream and taco sauce. Enjoy... Serves 6

A big batch of macaroni & cheese as a side dish always goes well in a large group.

As for meat, a big Costco ham for $10 feeds a lot of people with some quality meat at a cheap price.

I play it by ear. I have even made my version(copied) of brussel sprouts that stunk to high heaven, but tasted great.

Entering the time of year where jambalya is also a big hit. A couple boxes of Zartarians jambalya and a cut up kilbasa and it yummy!

here's the things I've seen go really fast at pot lucks:
shepherd's pie (especially if you do an au gratin thing on top of the mashed potatoes)
scalloped potatoes especially if they're cheesy, not just the milk/potato/ham kind, which is kinda bland
mexican lasagna (tortillas layered with meat, cheese, refried beans, etc, topped with salsa and sour cream
chili with baby smoky links in it
any type of chicken and dumpling casserole
the usual old green bean casserole
home baked bread
jello salads (yeah, really!)

When we do potlucks, we have several people bring a main dish and a side dish or salad and several people bring a main dish and a dessert. Always plenty of food. We usually divide it up by first letter of last names. A-M bring main and side, N-Z bring main and dessert.

You never know what you are going to have at a potluck, that's why they call it pot luck! I've been to a lot of potlucks where it was all salads and potato dishes and no meat at all. That's OK if you are a vegetarian, but this carnivore wants MEAT!

I have planned several potlucks where people bring their own meat to BBQ and a dish to share. I provide a charcoal fire. I have half the people bring a side dish and the other half brings a dessert. I divided the group by their site number. If you are in an even site # bring a side dish, if you are in an odd site # bring a dessert.

I'm not sure how many pot luck dinners you are attending, but you seem to have the right idea. Mix it up, bring a meat dish one night and a side dish the next night.

This time of year, soups, stews and chili's work well for a meat dish. Potato casserole dishes work well for a side dish. Everyone likes dessert so the door is wide open there.

I like to keep my dishes simple or at least assemble them at home and cook at camp. This way I can spend more time socializing and not a lot of time in the RV kitchen. My crock pot is my good friend and I always use a crock pot liner for easy clean up! If I put together a casserole dish at home to heat up at camp, I like to use a foil pan so I don't have to worry about cleaning a dish or loosing one either!
