OK - I have the usual assortment of knifes,Ginsu,paring, sharp,dull, you name it. They are multiplying and taking up space.
What is the best knife you use? Name, size,place to buy? I am looking for one or two GOOD all purpose knife. I am willing to pay good money for good product - not name. What do I look for?

If I had to pick two, it would be an 8" chefs knife and 3" paring knife. In my home I have an assortment Henkles 4 star, In the trailer I litteraly have 7" chefs and 3" paring of a less expensive brand. Thats it. Thats all I need in the trailer.

Being just a cook, not a chef, , I have found that the best knife to take in the camper is filet knife and the best I have found, for the price, is at WallyWorld. It is in the fishing department and is only about $12, cheap enough that when it wears down, I just replace it. It peels potatoes like a charm, cuts thru meat nicely. I second the serrated knife for breads.
I gotta run with 3 knives, a large chopper, a small multi use and a serrated for items that require some sawing action. You don't have to spend a lot of money either. Bring a steelie and just keep what you have sharp. You probably already own what you need by the sounds of it.

Wustoff....8" chef's and a 3" paring knife...those I use every day.....Also a steel. I touch up the knives every time I use them.

a slicer with a 6" blade
and a paring knife.
these I use every day.
Also have a fillet knife, butcher knife, bread knife and steel.
but I don't use them very much.
