I do have a question about the placement of the thermister. I have seen it reported to move it up, and also down to make it colder in the fridge. Either one of the suggestions is wrong, or it doesn't make any difference anyway.

It is my understanding that raising the thermistor (i.e. placing it at the TOP of the fins) will result in cooler fridge temps. Since it has nowhere else to go heat rises inside the fridge, so by raising the thermistor the result will be the fridge calling for cooling more often and longer, thereby resulting in lower temps inside the box.
I was having similar cooling problems during a real hot spell last weekend. I already added a second fan in the back of the cabinet, I have the internal "E-Bay" twin fan, and I had switched to propane only. My fridge (Dometic 2862) is in a slideout, so I honestly believe it's not as efficient as a roof-vented arrangement.
I discovered that the thermistor had slid it's way down inside the plastic fin "mount" while traveling. Sliding it back up to the top and staying on propane solved my problems.

I am going to raise the thermister up on the fins just for the heck of it. it is near the bottom now. I am curious to see if it makes a difference. Hopefully I will get out again before winter to test it.

It should be about 1/3 of the way down from the top, not on the bottom.
