For about $50 (if they aren't sold out already) you get three nights of concerts. Reba is the headliner this year.
The daytime events are all free. Lots of street vendors & kids activities through downtown.
Knoxville Zoo is nice too that time of year because the weather gets a bit cooler allowing more interaction with the animals.

A second for Fall Creek Falls. Beautiful park, good camping, hiking and will be beautiful that time of year. I believe they also have a good golf course.
Have you been to Fall Creek Falls sp? It is near Crossville and they have FHU sites.
Lots of water Falls in the park.
Cumberland Caverns is near by.30 min
Chattanooga/LookOut Mt is about and hr away.

We love the trails,lake and the hike to the bottom of FCF is awsome.
There are three other falls that are an easy hike. 3 cable bridges.

You mention waterfalls, so a visit to Fall Creek Falls State Park would be nice.
I also take the skyway, camp at koa IN TELECO PLAINS, or indian boundry CG, stop at the teleco plains bakery for dinner plate size roll, bread and stuff all home baked , Tue. thru sat. see bauld river falls on the river road.
Take some corn and bait the wild pigs. drive some of the logging roads but take a GPS, Drive at night!!!
