1993 Coachmen, E350 with 360 EFI in it. GVWR is 11,500-12,000. Any ideas? I have a Malibu that is 3,100 pounds curb weight.

With a 360 I wouldn't want to try towing much over 2500lbs. Just the weight of the rig almost is max for that small of an engine. We had two rigs with Chrysler 360 engines and towed just a 18' boat which you could feel back there on every hill and stop light.

Check the gross combined vehicle weight in your Ford owner's manual. Also check what your hitch is rated for (tongue weight doesn't matter but towing capacity will). Depending on GCVW you may have to travel with the RV loaded lighter to stay within limits.

I thought the owner's manual would have the combined reading based on an empty van before Coachmen puts the box on, not after so it would read differently.

The Ford owner's manual should have a GCWR. With the 460, and standard gearing for the E350 cutaway, by the book you should have towing capacity for the Malibu. In the 90's the 460 was the biggest gas engine Ford made, had GCWRs in the 15,000 to 18,000 pound range for F-250, F-350 and E-350 cutaways.
Basic towing capacity of the chassis is GCWR - actual GVW (not GVWR). For a C, that might be limited by the hitch, but for delivery purposes Coachmen would have installed at least a 3500 pound hitch receiver for the driver's return vehicle.
It's when you have something a bit heavier than the Malibu, you have to start checking the actual weights vs. the numbers.

How long is your MH? Whats it rated to tow? The rear frame and hitch can be beef up to tow anything within reason. Just stay within your GVCW. Shoud be around 18000#. My Rig had a 3000# max hitch, I changed the hitch and reinforced the rear rails and I tow my car and trailer at 5000# no problems.
