How do I know when my tanks are close to being full? My Bantam doesn't have a monitoring system and I can't keep count of the people using the toilet or the sink.

I would install a monitor. That said, here are your options.
The toilet only has one interior opening and you are sitting on it. Look down the hole and don't let it rise above the bottom flange (floor level) or it might leak into the camper. Realistically, about 8-12" inches below the seal.
Being lowest point, the grey water will back up into the shower first. Not a good thing, but not a disaster either. By the time this happens, you are 125% full. Even trying to count, the grey water will fill up much faster than you expect.

my Bantam has guages above stove on range hood. It is possible you are already wired for guages. They may even already be there if someone has changed out the range hood. ?

There are some nice monitors that don't depend on drilling holes in the tank. Not worth the expense for me as I already have a factory fitted sensing system but if you have nothing they're worth looking at.

Good advice from Starcraft21SSO above...
except, I would not install a monitor unless you are willing to spend a good deal of coin on a top of the line system and run a lot of wires in tough to get to places...
Most monitors that come installed on these rigs are notorious for being inaccurate and unreliable.

In accurate? Yes. Accurate enough to prevent a big mess inside? So far for me.
Oh, and I forgot to add one on the black water. If your butt is wet, the tank is full.

on our trailite we have a monitor panel. only for fresh and grey. accurate enough.
the black tanks are small so i have always used the flashlight down the hole trick. the grey tank on ours is, i believe a bit smaller then the fresh tank.
so... if you use a full fresh tank and dont add water to your system, your grey should be full when your fresh is close to empty.
easier to see how much you have used by looking at the fresh tank, then to see whats in the grey.
but... if youre hooked to city water then it would be hard to tell until you see it in the drains.

That said, the grey tank holds more than the black tank. Usually the grey tank will start to fill up the shower/tub and you will smell it. Same thing with the black tank, it will start to smell when it's close to full......D

maybe on your huge DP, but not on his little Bantam hybrid. i seem to remember that the smaller Bantams only had a 7gall. black tank and a 10gall. gray tank.
most hybrids have the same size gray tank as the black tank, mine does.

When the black tank is near full you will see liquid when you flush the toilet and look down the throat. The gray tank is full when it backs up into the shower or tub. The galley tank is full when it backs up into the kitchen sink. The fresh tank is full when it runs out the fill cap and it's empty when it doesn't pump water through the faucets. That system ALWAYS works.
