It all depends on the rafter integrity- if the underlying structure is fine, 1/2" would be fine. If the rafters are rotted, you really need to deal with that as well.

BTW, the roof rafters are solid. I weight 300lbs and had no problem walking on the plywood patch, nothing budged.

The Eternabond work isn't the neatest job, but not bad for quickie first time. The Eternabond is impressive how it sticks & seals. The hardest part of the job was trying to clean the roof so the Eternabond will get a good grip. Come spring I have to recoat the entire roof, for sure.

Cost of repair materials;

1, 4'X8'X 3/4" plywood...........$20
1, 4'X8' FRP (fiberglass panel)..$28
1, 20' 4" Eternabond Roof tape...$20
1, A/C roof gasket...............$20
Total....$88

$88, not bad to fix such a nasty roof breakdown.

Just an update on the roof repair. We've had a lot of rain & even some snow since the repair & everything is nice and dry inside. We've even went camping with it twice since, so it was on the road and had some movement / bouncing and all is well.

Impressive job! You might consider running the eternabond around the cutout for the AC - should protect the new wood/old roof in the event the gasket leaks.
