I came across this while tracing the hot water lines in my Motorhome. Does anyone know what it is and what it does..?

The silver piece on the top is a type of cover and not a knob or handle.

That appears to be a vacuum breaker, a type of anti-syphon device. Used to prevent backflow of tainted or contaminated water into the potable water system.
Usually found on a tank rinsing or flushing system.
If at first you don't succeed, skydiving is not for you!!!

Thanks for the quick responses... I was able to get some numbers off the top but they didn't help much. It's a watts brass and tubular ANO A-882 PB113 3/4X3-1/2 and sells for $8.04 but that's as much as I could find.
In tracing my water lines I found a hot water line coming up from under the floor which runs 6' to this device mounted under the sink. A return water line runs back the same 6' and disappears through the floor. It's got me scratching my head as the primary hot water line comes through the floor in the same area and feeds the bathroom sink, shower and ends at the kitchen sink. I haven't been able to locate either of the lines below the floor yet to figure out what they are for. Perhaps a line for an outdoor shower/faucet... that I don't have?

You came across it while tracing hot water lines.......but you were not clear that is was on a hot water line.
If you trace the horizontal line does it connect to an outside connection for black tank flusher? If so it's an anti-siphon/back flow preventer.
As to the 'water hammer arrestor'....not familiar with ones that flow water thru them, usually they are 't' shaped.

X 2 to the above post, I initially thought it could be a Water Hammer Arrestor, used in residential (or RV) applications to control water pressure shock and prevent water hammer conditions. It can be installed in new or existing plumbing systems in any angle. But the Anti-Hammer valve would have a chargeable air schrader valve on it.

A water hammer arrestor would have only one water line leading into the air chamber. Some come with a built in tee fitting; most mount to a user supplied tee.
It appears to be a vacuum breaker type anti-siphon device. The location supports that. However, I can't think right off why one would be in the hot water line only.

There web site states that it is Anti-Siphon Vacuum Breakers for Irrigation Systems prevent the reverse flow of polluted water from entering into the potable water supply due to backsiphonage. It consists of brass body construction with bronze internal trim, chemical resistant silicone seat disc and an atmospheric vent to prevent spilling. Series 188A is ideal for low flow non-continuous pressure health hazard installations such as on residential irrigation systems. Maximum Pressure:125psi (8.6 bar).

Do you have a black tank cleanout? If so then it's probably in line with that.
