Am thinking of buying an 2011 Chevy Tahoe, LT, 5.3 v8, and have a 2005 Jayco 23FB, max weight of the trailer is 6500lbs. Will the Tahoe hadle it alright? We live in central Texas, mostly weekend camping trips.
I think you will fine as long as you do not pull your trailer in the mountains. We have a 2003 Tahoe with the 5.3L engine and it pulls our similar sized trailer in Tx fine. It could probably pull it in the mountains at reduced speeds or lots of high RPMs which I don't care for. I pulled a smaller lighter trailer with it in the Smokies and I was hitting 4500 RPM to maintain 60 MPH on long interstate grades
Should be a data plate that shows weight and towing limits on the drivers door post. Other option would be to look at trailer life towing guide on internet.

No reason it won't do what every other tow vehicle does, tow it's rating. Just be sure you're looking at the ACTUAL rating not just the headlines. Deduct weight of everything in the truck from the tow rating assigned by the factory and don't exceed ANY of the safety ratings (GVWR and GAWR) and you should be fine.

I have towed with a Tahoe in the past and also have a Jayco 23FB. when I towed with the Tahoe I was towing a lighter trailer, about 4500 loaded. It did fine at our base elevation of 5000' but struggled mightily in the Rockies. I had a 373.1 rearend ratio. I don't know if you can get that ratio in today's Tahoe but if you can I surely wo7uld consider it. Your 23FB is a moderately heavy trailer for it's length and your tongue weight will be a consideration also. My tongue weight is 850 lbs which includes 2 6volt golf cart batteries on the unit.
I have always towed my Jayco with a Chevy 2500HD 6.0 410.1.
Had a SWB denali based on a tahoe just a bigger motor and shocks but we towed about 1500k haveier then you and we did fine i.e the 6.0 is a little bigger but the 5.3 is deffenitly up to the task just let it rev...they were designed to rev all day not to mention the LS line of motors sound amazing hummimg up a pass.....but get the hitch set up right and hit the road ....
