Get it up on the roof if possible. You'll need a secure platform so not to damage the roof but if you could figure something out I would think it would be safe up there. Than again for that much trouble I'd get a cheap unit for the trip as someone else suggested.
Alright lets get serious, if you really want to keep that gen, build a chain length fence around it with razor wire on top. Then add a few IED's round it & then add another fence with razor wire on the outside and make it where it'll shock the cocka out of em. That should slow em down. Heck that's what they should do @ the border. JOMO

After the hurricanes in 04 and 05 we lived in the RV in the driveway. Dirt Bags were pushing a running, (stolen) lawn mower up to houses and stealing the generator from the front yard. In the middle of the night people would thing they tripped a breaker so they wouldn't rush out to investigate. By the time they got dressed and outside they realized they had been ripped off. These lowlifes are ingenious..... so am I.
I put my iron skillets on the front of the RV and tied fishing line across the front of my property. One night some kids tripped the line and the skillets fell making a loud noise. Before they knew what was happening one of them had a pretty red laser on their chest. The hood rats didn't bother me anymore.
Skillets are a very good low tech alarm.
You should be ok though, everyone knows there isn't much crime in that area.
I s'pose this is a bit "off-topic", but all of a sudden I'd like to ask the O.P.:
I'm real interested in this whole "boondocking near the Superdome" thing you're doing...
I live out west, and "boondocking" means "out in the boonies" to me...
How far out in the sticks can a location near the Superdome be, anyway?
Is this a parking lot/overnight tailgating party kind of thing, or what???
If you're renting a piece of pavement on private property with a bunch of other RV's, surely it'd be crawling with security...wouldn't it?

A cable thru the handle is no challenge for a thief. You can cut thru the handle with a hacksaw in a minute or so. A cable or chain is no challenge for a battery operated grinder. The safest way is to go ahead and chain it thru the handle while actually running and move it inside out of sight when not in actual use.
When we boondock in Quartzsite for a few days, I don't even try to lock it inside a bay, I take it inside the MH when not in use. Still have it after 7 years....so far, so good.
Your idea of the board and parking a wheel on it is probably the best of the bunch if your going to leave it unattended. I'd use a steel plate instead of lumber.

My wife does all the driving - I just get to hold the steering wheel.

Put it in the back of the truck, that way it will be partially obscured. Then if you really do not want to move it inside, build a cage out of expanded metal, angle iron, and encase the lock like they do the Job Boxes, so you can not get to it to cut it.
If you are going to watch a game, then the theives have time to figure out what they need then come back. (saws, bolt cutters, cinder blocks, etc.) You need to keep it out of site. After Katrina, I heard stories of people trying to steal running generators out of open garages. They quickly abandoned the idea when two shotgun armed homeowners were after them. I'm sure they got away with it in other areas. Bottom line, if there is something of value like a generator sitting there and no one is around....it is gone.
As someone else already mentioned...I would be worried about the power cord as well. Copper theives have been running rampant around here lately. They have no problem causing $100,000.00 in damages to get $800.00 worth of copper.

Be careful running it right beside your RV. Fumes, CO2, etc.
That it definitely not true. If you use a cut off wheel, you can cut through a 1/2 cable in about 20 seconds. If you have a heavy duty chain, unless you are carrying 4' bolt cutters, I would say the chain is much harder to cut through.
