My BIL has celiac disease. When they camp with the group we try to keep a variety of things he can enjoy. Texas Caviar with corn chips, rice krispy treats, Nut Crisp gluten free crackers with cheese are handy snacks. He also likes old fashioned banaana pudding (from scratch and thickened with corn starch) minus the vanilla wafers. Side dishes are challenging so we tend to stick to grilled veggies or potatoes or green salads with homemade dressing.
Go to the local library and check out Living Gluten Free for Dummies. I did - wanted to see if reducing flour would have an effect on family health.

How about some rice salads? We ate quite a few of those last summer. Tasty and healthy AND easy! Rice can be cooked ahead of time and taken in a ziplock. I'm sure allrecipes has some or just google. If you can't find any, let me know and I'll post a couple of mine that I found.

We've been GF for years. An old friend was diagnosed Celiac before most doctors even knew what it was. Back then, I remember it being extremely difficult for him to make a meal- as far as eating out, forget about it. Much easier now, IMHO. There's even restaurants like PF Changs, and Red Robin that provide GF menus.

I was diagnosed with Celiac Disease in 1996.
We threw out everything with wheat flour and bought Rice Flour.
For pasta I buy 'Tinkyada Pasta',taste good, but doesn't carry over well...
I take 'Udi's Bagels' or 'Rudi's Bagel's and use them for hamburger buns. I put them in the micro wave for 30 seconds and they will have the same texture as regular bagels. A slice of cheese, or onion, fills the holes and they work great for large hamburgers,BBQ's., or Chicken Salad.
In the last 16 yrs. we have tried and adjusted recipes for most of my favorite dishes. I began cooking much more when I went GF.
I just have to be careful eating out. I've found that most Mexican foods use Corn Flour for much of their cooking, so it's pretty much GF. I just stay away from breaded foods, unless I bread them.
Soft Taco's are generally out, due to wheat flour, but hard tacos are corn based and ok.
I'm luckier than most, because I'm not as intolerant to gluten as some, but I still avoid Wheat, Barley (most beers),Rye ect...
When I went GF I discovered there were about 2,000 foods I could no longer eat, I felt sorry for my self, till I discovered I could still eat about 5,000 other foods...
Thanks to the In-crowd in Hollywood, food companies now make more and more GF products. The price is too high, but now days there's a larger selection of GF in your grocery stores.
Sorry for writing a book, but it's a subject near and dear to my stomach...
1 avocado. Mix with teaspoon of mayo, fresh garlic, and a squeeze of lemon.
1 cup sour cream
1 head of lettuce, chopped
Brown the meat, and flavor with taco seasoning.
Heat beans. Pile the chips on a large serving plate, and spread the meat and beans evenly over the top, then spread the shredded cheese over that, and let it melt down for a minute or two.
Spread the chopped lettuce over all of it, then top with sour cream and guacamole to your liking. It’s also tasty with some diced green chilies to give it some zing.
Serves all 7 hungry mouths, and there's never a bit left!
