We'll probably be coming out of Tinker AFB in Oklahoma City but I-70 out of Denver looks pretty mountainness. We'd be open to coming in from Utah or any other route that is not in the high mountains.
It has been a while since I was down that way, but IIRC, the biggest thing is to watch for elk on the road! State Route 13 is a two lane mountain road, and it is the only route I have ever used, since I am always going from Craig to Rifle and back, on the way to/from either Grand Junction or Moab, Utah.
State Route 13 has always been in pretty good shape, except for occasional construction.
Again, watch for elk on the road! They are BIG, and if you hit one, it WILL hurt!
Looking at the map, you only have two choices:
U.S. 40 from Denver to Craig, then St. Rt 13 to Meeker
or
I-70 from Denver to Rifle, then St. Rt. 13 to Meeker
I just don't see any other way to get there. I would stay on the freeway, and avoid the 2-lane as much as possible, if you are concerned about mountainous roads.
No matter what, you will have to take St. Rt 13 to get to Meeker. there will be hills and curves...
and elk.

Yes, you could go over into Utah and take U.S. 40 to Craig, or I-70 to Rifle, but I really don't see where it would gain you anything.

Here's another way, one that I use part of the way to go to Olathe, CO for the summer.
Take 64 W to I-25N to 160W to 17N to Hooper and then go 112W to where it meets 285N to 114(W or N) to 50W to I-70 (take Palisade cutoff) to Rifle to Meeker.
It's a little roundabout rather than taking I-70 but will be a little less stressful for you. You will still have some passes to go over but nothing that compares to I-70 coming from Denver. I always take the part that begins with I-25N out of Raton Pass.
Mowermech, how is Hwy 64 off Hwy 40 from Utah? I have a problem with blood pressure in real high mountains and end up in the ER. I know it is Colorado and there are mountains to deal with but I'd like to find the "flat lander" route.
Whichever route you take try to avoid early morning or evenings for driving. The elk and deer herds are big around there. Certain times of the summer look like the killing fields with deer and elk carcasses every where.

I have never used that route, but from the map it looks like it pretty much follows the White River, and as such there should be no mountain passes to deal with.
However, I would bet there is one or more fairly high (6000 ft. more or less) passes no matter what route you take. I know there is one on U.S. 40 near Orem, Utah, but there may be a way around it.
I guess you will have to get your trusty road atlas out, and start tracing various routes until you find one you can handle.

That seems like the easiest way to get around places these days.
My kids use their iPhones, but I couldn't use one of those damn things to save my life.
