2 tbsp Butter
2 tbsp Self-rising flour
stir together in pan to make a roux...letting it brown slightly and mix until smooth...
Add about 3/4 - 1 cup of milk...and stir constantly
Add salt and pepper to taste
Add in crumbles of sausage for a real treat...
I'm not sure about the measurments...but they'll get you in the ballpark. I just throw stuff together...and tinker with additional flour to thicken or milk to thin it out.

I started using Southeastern Mills Country gravy mix, the old fashioned peppered gravy mix with sausage. I fry fresh sausage adding onions, peppers and seasoning to the gravy. Package makes 3 cups.

x2 on the Southern Mills Country gravy mix. I just add some crumbled fried sausage. If you don't like it quite so spicy, they have a more of a white gravy alternative. I think it is called, Country gravy.
People always want my recipe, so it can't be too bad. Terry R.

I brown 1 lb of sausage, remove sausage and leave the grease. I usually have to add about 2 Tbs more oil. Add about 1/3 cup of flour and mix with the oil over medium heat. After the flour browns I add about half a skillet full of milk.:-) Whisk until it almost comes to a boil. Turn off heat and add sausage back to the pan. Salt and pepper to taste(I like lots of pepper!). I also add a little onion powder for a little more depth. All of the amounts are guesses, for some people like me it takes a LOT of practice to get decent gravy....

Farmers Brothers makes an excellent white gravy mix that you add water to and pour it over whatever you want a white gravy on. Many restaurants use it.
No person is completely worthless ... one can always serve as a bad example.

I've started using the gravy mixes too...It's really easy for camping, but I use it at home also!

It depends on how many I'm feeding but for 2 of us this is what I do. I do try to watch the amount of fat in our meals....
Fry about 1/4 of a sausage roll then squish out as much fat as I can between a section of newspaper lined with paper towels.
Wipe out the skillet to remove as much grease as I can. Put the sausage back in and add 3-4 tablespoons of flour and mix with the sausage. There is still plenty of grease in the sausage to absorb the flour.
Mix about 3/4 cup fat free half & half & 3/4 cup skim milk and pour it slowly into the hot sausage/flour mix while stirring it.
Add as much seasoning as you want. I like to put a pinch of cayenne pepper & some extra sage in.
I'll have to try the Southern Mills Country gravy mix!

Pioneer gravy mix is good, as well.
If you want really, really easy get Libby's sausage gravy in a can. It's good!

Good sausage - Fry in skillet - Leave in fat.
Add enough flour to absorb the fat and cook over medium heat for 2-3 minutes. (We do not remove sausage)
Whisk in 2% milk slowly. Let cook over medium for a few more minutes.
Season with salt and fresh ground pepper, and just a dash of cayenne.
That's how I do it and I have never had anyone complain
