After reading all these recipes, I went to the Spam site and found this recipe:
Spam Burgers
1 can Spam, grated
3/4 C Italian seasoned breadcrumbs
1 large egg, beaten
1/4 C Thousand Island dressing
Mix and form into 4 patties
Broil a few minutes on each side to desired doneness
Add slices Swiss cheese and Thousand Island dressing to bun for a Reuben--or--whatever you prefer for a regular burger.
I think I am going to try it, though my husband prefers Spam sliced and fried!

I worked a trade show for my company a couple years ago in Honolulu. My broker representative also represents Spam and Yoshida Sauce in Hawaii and we shared a booth. They had 2 Japaneese ladies cooking rice and makind Spam Sushi all day long. It was great and they could hardly keep up with the demand for samples. I forgot what they called it, but it was tasty.
Not sure this has been posted - I'm too lazy to go thru all the answers. Here's my favorite -- and I've made it in the dutch oven, too.
Layer a can or 2 of sweet potatoes/yams in a casserole dish or DO.
Layer sliced spam on top
Layer crushed or sliced pineapple on top (save juice for later)
Plop pats of butter over it --- no determined amount - just SOME
Sprinkle with a handful of brown sugar
now drizzle some of the pineapple juice over it all --- not too much.
Bake until everything is hot. about 1/2 hour or so ----- I've been doing it in the microwave so I don't remember how long it'll take.

We usually put a can of Spam in DS's Christmas stocking for backpacking with his dad. They fry it with onions and make sandwiches. For real Spam fans, stop at the Spam Museum in Austin, Mn. We went by it once...talked DH out of stopping!
I just went to a Spam cook-off this past weekend. Evidently they are almost as popular as BBQ or chili cookoffs in some places.
Anyway, some of the recipes - cheese ball from the spam.com site - it wasn't entered but someone had made it for consumption. If you hadn't known it had Spam, you wouldn't have known it had Spam
Stuffed bell peppers, chili rellenos, Spam stroganoff, Spam in a blankets made with Pillsbury crescent rolls and cream cheese, empenadas, Spam hash, Spam croquets, friend Spam, fried Spam balls like hush puppies, and the winner was Spam spring rolls.
