I am desperately trying to find a good buttermilk pancake recipe. All the boxed stuff is gross. I have tried Aunt Jemima, Hungry Jack, Bisquick and Krusteaz, and always end up less than impressed.

I don't know if the brand is still around, Carnation Pacific evaporated milk had a great recipe on the container.They were light and soooo good.

Don't know if it is available in your area, but the best mix I've found is New Hope Mills.

if all else fails, go from scratch. and see if you can make a better pancake.

I use the pancake mix from Cracker Barrel, you just add water and fry. Our family loves them. I think the secret is putting a little butter or oil in the skillet or on the grill, makes the edges all nice and crispy.

If you can't find a boxed pancake go to Cook's .com,you can find a receipt for almost anything there.

Whether you make it from scratch or if you use a mix, letting the batter stand for at least 30 minutes makes for a taster pancake. Don't know why, but if I hurry things up, the results are not the same.

I occasionally make pancakes from scratch--

1 C self-rising flour
1 egg
3/4 C to 1 C milk (regular or buttermilk)
2 T oil
1 T sugar

Whisk ingredients together and cook.

I also use this for waffles, but increase the eggs to 2 and separate, mixing the yolks with the other ingredients and in another bowl, beat the egg whites till fluffy and then fold into mixture.

If you can get it/find it, Snoqualmine Falls mix is the ONLY premix worth it's soul. The oil, self rising flour (AND a pinch of baking powder) and a dash of vanilla extract may get you there. I also pour approx. 1 teaspoon maple syrup in the batter. Let rest even if not making waffles. For pancakes, don't over mix and watch you viscosity. It will change as batter goes down.
