As you have not given the time frame and your interest it is difficult to give you advice BUT I will tell how I plan my RV trips.
A.I mark on a map the places I want to visit.
B.Combine the marks with scenic routes.
C.Look for C.G/Provincial Parks along the route.
D.Make a list of "THINGS TO DO" for each stop.
E.I post my route on the forum and ask for "remarks".

1st tip. Searching. Both Google and Yahoo have domain specific search engines. Domain for Canada is ".ca". So, https://www.google.ca.
Then put in the province you want and 'tourism'.
2. Call the provincial tourism office to ask for your visitors guide 2012. Why? To give you a chance to ask for your interests. They will send you additional pamphlets on those interests.
Let's take hiking. My preferences: Campobello Island and Grand Manan Island, Fundy National Park.
Local food interests: Saint John City Market.
campgrounds for the whole family. Mactaquac Provincial Park, near Fredericton. (in fact NB PPs are nice, have trees, or you're not stuck thinking you're in a parking lot)
Historical New Brunswick: Hartland Covered Bridge, Kings Landing, Acadian Historical Village (living history)
