About 25 years ago we lived a few miles from a place that had kokanee salmon. I would gut the fish and take the head off. My wife would dip the salmon in boiling water and then take a paper towel and wipe the skin off. I would then put it on the grill with some alder wood for smoke. A little butter and some lemon pepper seasoning. It was fantastic.

Sounds great! Would you mind picking up some salmon & bringing them down here to GA to give me a demonstration?

I would love to, but my boss is on vacation in Nevada. Some body has to work. It looks like it is going to be me.

Eight more years and my time is my own.

Once this skin is off, there is a dark line that goes down the side of the fish. Cut that out before you cook it and the meat will not be as fishy.
