About 25 years ago we lived a few miles from a place that had kokanee salmon. I would gut the fish and take the head off. My wife would dip the salmon in boiling water and then take a paper towel and wipe the skin off. I would then put it on the grill with some alder wood for smoke. A little butter and some lemon pepper seasoning. It was fantastic.

Sounds delicious. How long does the DW dip the fish for ?

Just in and out. It cooks the the skin just enough to wipe it off.

Once this skin is off, there is a dark line that goes down the side of the fish. Cut that out before you cook it and the meat will not be as fishy.
