while camping this past weekend I installed a 6" Smoke Daddy Cold Smoke Generator on our Holland Companion grill .... I patterned the install after the one shown in 4th picture shown in this link.... the grill comes with a smoker pan but I've never found it to be very effective .... using hickory pellets purchased with the Smoke Daddy we cold smoked some mild cheddar, sharp cheddar, and Munster cheese for about 2 hours .... it worked well, but the next time I think I will reduce the smoking time to about an hour and a half .... the next day we cold smoked a three pound pork country rib for about two hours and then fired up the grill as we continued smoking it along with medium heat from grill .... the result was exceptional .... to mount the Smoke Daddy I had to drill a 3/4" hole which will be covered when the smoker is not in use by a "Light Hole Cover" which is part 15 in the link .... we have a large smoker at home and now be able to smoke foods we enjoy while traveling
Very interesting!! I'll be looking into this. I agree on the effectiveness of the Holland Companion as a smoker. I love that little grill but would like more smoke flavor. Thanks for the link.

I've been using a Smoke Daddy for about 2 years now and love it!!! It's easy to control the smoke, you can use chips or pellets, and use it to cold smoke or smoke while cooking.
The best part is that you can add it to just about any barbecue, grill, or smoker.
