I just recently tasted baked potato salad. Right after having it the first time they made it on the show called campfire cafe. Does anyone here make it and what all do you add to yours?

I think I may give it a try, but I will really need to work with lightening it up a bit, because it is over the top in fat. I guess that is why it tasted so good.

I buy it at Publix all the time and I love it, so I found a recipe online at: http://www.food.com/recipe/so-yummy-baked-potato-salad-21304 I haven't tried it yet, so I don't know how good it is, but it looks pretty good!

I will have to pick some up at Publix.

The recipe sounds good but I am not sure that I might not still prefer boiled over baked.

But I won't know until I try.

If I am just going to make a small batch of potato salad, I cook my potatoes in the microwave. Then I make like I would my regular potato salad which includes celery,onions,raddishes,cucumbers that I take out the seeds, and Mayo. Mix all together and top with quarted hard boiled eggs and paprika. I would say that would be close to bake potatos as it is a dryer potato than boiled.

Well I quess you could instead of adding 8 slices of bacon just put in 7 slices. Now that would work for me.

Bought the Publix version. So, so bad! Without real mayo -- forget it. Bacon was non-existent. If you want good potato salad, make it yourself. And that's a fact, Jack.
