Yep, the springs keep the brakes from self applying and also pull the shoes away from the drums when you lift your foot. So a loose spring could allow the shoe to wedge out against the drum and lock up the wheel.

Sounds like technician error. Either it was loose and came off when the tech was inspecting/adjusting brakes or he knocked it loose. Either way, sounds like the tech did not double check his work when done. Should be fine now.

Now that my excitement at the issue being resolved, reality has sunk in.....what would make the spring come loose and I wonder if is apt to come off or get loose again while on the road
I've never seen a spring pop loose on it's own. It's possible that the mechanic accidentally knocked it loose inspecting or adjusting the brakes, but there's just no way to tell now.
Assuming he made sure the spring was properly seated I doubt you'll have any more problems with it.
