I can't help with a RV Park, but I would suggest that you be in the area around Fathers Day. Then take a day trip up to the top of Roan Mountain. The Balds are covered in rhododendron and generally peak about then. Awesome!!!!
If so, there are several options for you. Blountville is just outside the "Tri-Cities" area (Kingsport, Bristol and Johnson City) of TN and the Bristol Motor Speedway. There are several lakes within a 30 minute drive - Boone, Holston, Cherokee.
You will be a little over an hour away from the Pigeon Forge/Gatlinburg area, so all of that is within easy driving.
If you want an RV Park, check out Lakeview in Bluff City (423-538-5600), about 3 minutes away from Blountville and right on Boone Lake, or the Bristol KOA, which will be about 10 minutes away. If you are wanting a campground, Warrior's Path SP is about 5 minutes away, but they have no reservations, it's a first come basis. This is to your advantage if you plan to arrive on a Tuesday or Wednesday.
It can be hot and humid around here during the summer, but you are from Alabama, so you are probably used to that. May is usually beautiful, not too hot, but cool in the evenings. There is usually lots going on in the region during the summer and early fall months.
PM me if you have specific questions - I am about an hour away from the area, so know it pretty well.
