Don't the 20's have a higher load rating?
Tire manufactures are always behind the leaning curve when it comes to trucks.
By the time you need new tires there should be plenty of options in the 20" variety.

x2. That is the logic I would use to justify getting 20" wheels. But really, I like the look.
The 275/65 r 20 are 34 " tall. The 265/70 r 18's are 32.6". This means the 20" tires are only raising your truck by less than 3/4 of an inch. (1/2 the difference in diameter)

By going with the taller tire, you're giving up some axle gearing (torque) advantage, as well as giving up some braking performance. Taller tires are harder to stop, and harder to get going.

Going from a 32.6" tire to a 34" tire with 3.73 axle gearing has a similar effect on torque as keeping the tires the same size and changing the gearing to 3.55.

Too bad GM's 20" tire is 265/60/20 and is 32.5" in diameter.

Can you get the 20s on the Chevy 3500SRW?

The last I checked the 3500SRW was only available with 18s. To get the 20s you had to drop down to the 2500HD.
Interesting point.

Definitely not worth it to get the 2500 just to get 20" wheels. The 3500 with 18's is a much better choice. The 3500 dually with 17's is an even better choice.

In the owners manual for my 2011 2500HD it says that you shouldn't take the truck off road if you have 20" wheels.

BTW: the 6'6" bed is the standard bed, the short bed I believe is 5' long.
