Ingredients:
-Large Tortillas
-Eggs
-Sausage
-Cheese
-Potatoes
-Other Ingredients (Onions, Green Peppers, Etc.)
Chop up the potatoes and boil them. Then cook the eggs scrambled style and fry the sausage. In a large bowl, mix the eggs, potatoes, sausage and any other ingredients (diced). Take the mixture from the bowl and add to the tortillas, topping them with cheese. Fold up the tortillas into burritos and then wrap each in aluminum foil. After them have cooled, place the wrapped burritos into resealable bags and keep them cool until they are used. To heat the burritos, simply place the foil wrapped burritos on warm coals for 10 minutes or until tortillas are golden brown."

I've no house in the city, just a camping tent in the wild.
Many times we will bring a Package of tortillas and for the final breakfast, before heading home, I will combine many of the leftovers from previous meals, add eggs and cheese, and wrap them up. Great way to clean out the frig.
We do something similar, but we also add green chilis fresh roasted or Hatch's canned). I put all of the stuffing in a zip lock bag in the fridge or cooler, and heat the amount I need. That way the tortillas don't get soggy. Throw some salsa on and enjoy!!

Using frozen hashbrown potatoes is a good way to do it also. Throw just the amount you need in a hot skillet with a little oil, stir around, and they are ready in just a few minutes. Then mix with all the other ingredients.
Actually I do it all together in the same skillet. Potatoes in first, cook until potatoes brown, add onions and jalapenos, cook a while, add eggs and scramble all together, add crumbled bacon and/or sausage, mix well, add cheese, melt, roll it all into warm tortillas (flour or corn depending on your taste) with a little salsa if desired.
To be a burrito you gotta' have some chile in it. Green chile is my preference but red will do nicely. Without chile you have a sandwich with a tortilla instead of bread.

That sounds like a great kid-friendly recipe... Do the eggs come out of the bags easily? Do you ever have a bag break or melt?

I had a bag melt a few times. Best to use the heavier freezer bags. Never had trouble getting the egg out myself.
