I almost always make Carne Asada or some similar grilled meat for tacos one night, so we also always keep some leftovers for breakfast....

The breakfast of leftovers+:
----------------------------
carne asada (already chopped from night before)
black beans (possibly) leftover
hasbrowns (string) - frozen bag, defrosted
eggs - scrambled
lefotver Cotija Cheese, onions, cilantro etc.
flour tortillas

We have a big griddle and the key is grilling some onion slices along with the meat, and mixing into the potatoes to make a hash !

Use some of the same carne asada seasoning on the hashbrowns in the am !

dang.... Im hungry again!
(don't forget the Tapatio )
