The hybrids, or gmo etc is not designed to improve quality. They are about increasing speed of production, improve losses from pests, and improve shipping and storage. This started before Burbank.
I remember the gospel of Burbank being preached to us in school.
The Idaho Baker potato was lauded because it could be grown,in poor soil with too much water. Now it seems to be the standard refernce point bu it is not a great potato. Asn os it goes on. Angus was preached as the new standard but is not great beef. They grow faster, leaner, and to a higher weight, with more resistance to elements and pest with lower management. The new Strawberries are really infuriating. They have smell but little flavor. They ship and store well or long shelf life. Real Strawberries don't store too long and pest find them first it seems. They won't give the new things much of a look. GMO corn perhaps presents a real health problem with pesticides bred into them
The family farm is largely gone and factory farms and production and profits come first last and only. Regulation to prevent this dangers predation is practically null. It is not Farmers wanting to manipulate supply and what we consume but Big Industial Ag.
We have little ability to control what we buy for the table because they produce what is available.

I disagree, frog legs taste like chicken, but chicken fried game hens taste better than either
