We packed the wheel bearings in September 2011 have traveled approximately 8000 since. They say once a year, but would it be prudent to pack them now?

Easier packing them now that replacing them on the highway. Brakes should be inspected annually anyways.

No, the yearly thing is just a CYA thing. The reality is they will go many times that long if they were done correctly in the first place. I went about 40K and when I did them they were still perfect and didn't need to be greased.
They're no different from the front wheel bearing on rear wheel drive cars and they go between brake jobs w/o greasing.
I would left each wheel and verify brake adjustment along with making sure there is no bearing noise or play.

I'd have to agree. The bearing really don't need to be repacked that often, but just the idea that you are removing the tire and inspecting the running gear on a regular basis makes it worth the effort. It's the same reason for using an infrared thermometer to monitor your tires and wheel hubs at every stop.
It's always easier to find a problem before it becomes an emergency.

But, if you've got time and inclination, it won't hurt to do it.
Most front bearings on 2WD cars get done when the brakes are rebuilt, if even then.

I have Ez-Lube, so I pump as few pumps in three hubs once a year. I then take one hub open to check brakes, and hand repack. Thus each hub gets repacked once every five years. Works great for us. We do 8000 to 9000 miles a year.
