If you go with a diesel you will get around 12 or more but with gas don't count on more than 10 mpg with straight freeway driving. I get 10 with our 25 ft (actual length) but with city in, usually 9 mpg per tank full. It's a chevy 8.1.

Have you looked at a 24foot Lazy Daze Twin/King?

I ask because at 55mph I've managed 11 mpg (calculated at the pump) a few times in my 26ft mid bath. On the Lazy Daze site 24' owners report the similar mileage more often. Over 55 the mileage drops fast on my rig.

truth in posting, I am a rookie. There are many here who have been doing this much longer. Just trying to help.

In 07 and 08 Winnebago made the View 24j that has the setup you are looking for. I have one.

3.5 MB gas engine that I get 11 towing my Mariner behind, 13 without.
Rear bed, cab over bed, one slide. Mine has the dinette, but some have a couch.

They didn't make many, as they never sold well. The 3.0 diesel came out and gave as good performance and better mileage.

Lot's of upside to this rig if you can find a nice used one. But the 2 downsides are that it uses premium fuel and it is an orphan engine. It was marketed by Dodge, but finding Dodge or MB or Freightliner places that can work on it may be an issue. I have a Dodge place in Tucson that has handled my two issues nicely.

dcason - Probably there are more units that will meet your requirements, but here is one the Coachman Freelander 21qb. If you can find one that you like and it is a Chevy, you should be able to get 12 mpg if you drive as if you have a raw egg between your foot and the accelerator.

Mine is called a B+ (so a little more slipstreamed) and I have a documented 12.1 mpg average for right at 40,000 miles.

Answer to some of your options:

The 'rear double' in the Quest accommodates me and my wife: she's short (on the bulkhead side) and I'm 6'2" and fit fine on the outboard side.

Diesel: the joy is that the MB has such a track record that you shouldn't have to work on it for several hundred thousand miles.

Hot on my research list is the 24J view, freelander (thanks for that one) and the lazedaze. I need to somehow find a real life lazedaze to see inside one (how we could modify the king/table area to make one bed and still keep the table.
