I know it's not soup weather, but I had to share this recipe a friend gave me.

Luby’s Beef Tortilla Soup

6 cups Chicken Broth
10 oz. can Rotel
1 1/3 teasp. ground cumin
1 small clove garlic minced
2 teasp. Salt or salt to taste
1 ¼ teasp. Pepper
9 oz. can cream style corn
4 oz. American Cheese, Shredded
¼ cup cornstarch
½ cup cool water
½ lb. – 1 lb. lean ground beef
3 tablesp. White onion, finely chopped
1 pkg. (4 oz.) White Corn Tortillas, cut into 1 x 3 strips
Vegetable Oil

1. Bring Chicken broth to boil in a large pot.
2. In a separate pan, brown ground beef and onion (drain off grease).
3. Add Rotel to broth and bring to boil.
4. Add cumin, garlic, salt, pepper, cream style corn, and cheese. Bring mixture back to a boil and adjust heat so soup is just simmering.
5. Add beef mixture and as many tortilla strips that you like. (I normally add more than it calls for)
6. In a small bowl, dissolve cornstarch in water. Slowly add cornstarch mixture to simmering soup, stirring constantly until you have thickness you like. Allow to simmer 10 minutes.

Make sure to stir your soup so the cheese does not stick to the bottom and burn.

Haha. I am only stuck here in Calif for a couple more years. I am actually from Ft Worth, Tx. See, it's not where you are from, it's what you like.

I know what you mean. No American cheese or canned corn here either. Plenty of extra sharp cheddar and RO*TEL though. Sounds good

I miss having a Luby's. When we lived in San Antonio I worked down the street from what they called the test kitchen. It was in the basement of an old building. Once a week the office would go eat on Friday's. Our's closed here in Midland about 5 years ago. I think it was a big mistake, all we have is Furr's and it is no match for Luby's.

Sorry for the confusion. The recipe listed "American Cheese". I always use some type of cheddar when it calls for "American Cheese".
