In SC, we don't need license plates on boat trailers. If I only plan on pulling the boat in AL, FL, GA, TN, and NC, will I need license plates in those state to prevent getting an unwanted souvenoir?

Boats trailers have license plates in NC. But in the unlikely chance you get pulled, just tell'em you're from SC and you don't need them and they'll tell you to have a nice day.

This is the correct answer. You only need to comply with the registration laws in YOUR home state. As long as you do that, you are legal in ALL other states.
As far as being hassled, if traveling through a state that requires boat trailer licensing in that state, all the officer needs to see is that your truck has an out of state plate and your boat also has an out of state registration, and they won't give you a problem about the trailer.
