My method for thawing meat for dinner while I'm at work: put package of meat in the sink and empty ice cube bin on top of it. When I get home, meat is thawed, most of the ice is melted & dripped down the drain. Meat is icy cold. Done this many times.

The filets will be mushy. Better to cook them all, then freeze the cooked portions.

As long as there are still ice cystals in it you are safe to refreeze. However you are going to lose some quality.
