What is your favorite way to prepare fresh artichokes? Does anyone have a special dip they use when eating them? Thanks.

Cook them whole in salt water until a leaf pulls off easily. Chill in the refer. Put mayonaise in a bowl. Peal and eat.

I cook them whole in water with a bit of fresh lemon juice (or just the leftover rind), when the tough outer leaves are cooked, cut the artichoke in half and scoop out the choke. Then I make a simple aioli sauce of mayonnaise, mustard, grated garlic, fresh lemon juice, and a bit of paprika.

I usually trim the bottom of stem, cut off a bit of the top, and use scissors to cut off the spikes on the ends of the leaves before cooking. One of the cooking shows said that artichokes without the spikes seem have less flavor?

Just like donn0128 but hot and dip in drawn butter...when you get to the heart, remove the hair, slice up the core and enjoy

Instead of cooking them in water, try steaming them for 45 minutes. They don't have the waterlogged taste you get if you overcook them. Steaming is quicker, too as temp is higher. I usually cute a lemon in half and squeeze the juice over the artichokes then throw the lemons in the boiling water to flavor the steam.

I trim the top a bit and the bottom, snip off the sharp points. Then I cook them in my pressure cooker with some water and lemon.

I prefer to dip them in lemon butter, my daughter uses garlic butter, the grands use ranch dip, and my niece uses mayo.

I use curry mayonnaise for my dip (just mix curry powder with mayo).

Chop a bit off the top and and bit off the stem. I also like to use this Amco Artichoke Steaming Stand, drizzle with lemon and garlic powder and steam for 45 minutes.

Husband likes mayo and I prefer a dip made of butter, lemon, dill & marjoram.

We dip ours in melted garlic butter with Italian seasoning added.
