When my RV is in the storage lot, I keep the hitch end a bit higher to allow water to flow down the back. Mostly because my front seal is only so-so right now (on the to do list).
Do you store your trailer level?

I don't because the last thing I want is water puddling on top. I leave it at a slight incline so water drains off faster.

The roofs of my fiver is sloped so when level water won't puddle anywhere. The roof of my TT is radiused, so if level it won't puddle any too. With them level, it is no problem running the slides in and out. Right now, the fiver is a bit off side to side (I didn't bother leveling it when we returned home a few weeks ago because I knew I would be moving it again soon), and the slide doesn't like it one bit if you try to run it in or out.

Mine is max nose high for drainage of water/snow melt.

I usually store mine in the shed so yes I leave it level. If it's outside I still usually leave it level because I like to start the fridge a day before I leave and the fridge should be level when it's running.

Whatever height my TT is in the front from unhooking, that's where I keep it. The roof has a radius to it so water puddling shouldn't be a concern.

If you have a flat roof storing noise high or low is not a bad idea. with a radius roof it really doesn't make any difference. If you DO store it out of level then be sure you don't FORGET and fire up the fridge for a cool down without leveling first.

How much of an angle can the fridge handle? We've been firing up the fridge in propane mode the night before we leave so it'll be nice and cold.
I live in Florida - lots of sun - is puddling really an issue? I never really thought to leave it nose high. None of the TT's around me do that. They all look level to me.

Just nose high enough to clear the hitch ball to speed unhitching and hitching. Not any higher as I do not put down the stabilizers and I do not want the wind to rock the TT excessively and bend the tongue jack tube.
