Coming up in July the family and I will be leaving Seven Points Campground and heading to Pigeon Forge for the nest leg of our trip. I have come down I75 many times, hit I40 on my way to Pigeon Forge, but have never made the journey from Nashville.
Is it just easier to stay on I40, go through Knoxville, then hit exit 407 into Sevierville. Or is their an easier route and good road to bypass Knoxville?
We will be staying at River Plantation Campground in Sevierville.

I'd stay right on I-40 and not go the bypass, but it's also according to what timte I hit Knoxville. If it's midday - go I-40. If it's later than midday or in the am, take I-640. Since you are going to River Plantation, exit 407 is the best way. I can't believe I am saying that, usually I say to NEVER take exit 407. I am sure there are roads that will bypass Knoxville, but this is the best road to get to River Plantation.
