I catered for 72 people @ a wedding dinner. I served taco salad. I precooked the tortilla bowls and served both chicken and ground beef. Add the topping and some side dishes and a few drinks.

We fed 65 people on a rockhound trip. Have a canner sized kettle and made beef stew in it. Used most of the normal veggies with the addition of beans, which tasted fine in there and cheaply stretched the beef stew. Offered both saltines and oyster crackers that went very well.

Make it easy on yourself so you can enjoy whats going on. I'm all in favor of cooking whatever you decide ahead of time so all you have to do is warm up and throw a couple sides togther

Can't go wrong with Pasta to feed a crowd

Cook the pasta ahead of time. Make the sauce ahead of time and warm throughout the day on 'your' day. Meatballs and or sausage, or it is easier to simply make a meat sauce with ground hamburger.

Also provide bread and butter.

You could also prepare some simple apps ahead of time. Veggie platter, crackers and cheese / pepperoni.

A large salad would be nice too.

The last time I had to cook for a lot of people (300) I had 12 hours of lead time. We served them a make your own taco/burrito bar.
That included a pot with refried beans, one with black beans and one with seasoned ground beef. Then a side table with the tortillas and taco shell plus all the fixings.

Went over well with limited expense and effort.

Do a Google search on "cooking recipes for a crowd" you will get lots of hits. There is all sorts of websites with recipes and instructions. Happy hunting!

Pick up a can cooker and do a cream can supper. All it takes is some sausage, potatoes, corn on the cob, carrots and cabbage. It makes a meal that everyone will love, and takes very little work. We do it all the time camping and everyone loves it. Let me know if you want more instruction. Take care.....Mark

Easy to make potato salad or macaroni salad for an army. Brats, saurkraut and maybe one of your dutch ovens to the brim with baked beans.

Pernil in a Dutch oven will feed a crowd (it's fantastic, and cheap too)
Pulled pork is pretty much the same thing. Easy to cook and serve. Big tubs of slaw and buns go with it.

DIY tacos is also cake. You can make a ton of carne or pollo asada, add some tortillas, rice and beans. (And here in SoCal, getting catering trays of rice/beans is easy everywhere)

Baked potatoes are easy too - wrapem in foil and chuck em into a firepit.

Fry 2-3 turkeys.

Burgers and dogs - get a big grill going.
