Just posted this recipe on our site in time for Cinqo de Mayo!
1 lb frozen shelled deveined shrimp (or fresh)
1 tbsp vegetable oil
1 lime
1/2 package of taco seasoning
Corn tortillas
Shredded cheese
Shredded lettuce
Diced tomatoes
Salsa
Place frozen shrimp in colander and run cold water over them for about five minutes to thaw. Heat oil in sauté pan on medium heat. Add shrimp. Squeeze 1/2 of lime over shrimp. Sprinkle 1/2 package of taco seasoning over shrimp. Stir and cook until shrimp turn pink, about five minutes. Heat corn tortillas two at a time in sauté pan 30 seconds per side. Spoon shrimp into warm corn tortilla and top with cheese,lettuce,tomatoes, and salsa. Enjoy!
Not mentioned in the article, but you can also add your favorite guacomole as well!
