I'm a much bigger eater than you. I would spend at least three times if not four times as much on food.
I can live without propane.
I slept in a tent before, sleeping in a truck wouldn't be any different.
As far as maintenance, take the difference from my groceries. Save that up every month.
You see, I plan to live out of the truck. If that means I boondock on the side of the road, you know what? That's just ok. My only expenses are insurance and Gas. If it runs and it's insured. Maintenance will be secondary, I can do preventive maintenance on the truck myself. I will be living sparingly, not in opulence in some club. I will be satisfied I parked the rig next to the ocean and lived out of that. I have a mountain bike and I'm a pretty decent rider, get a job local to the truck to pay for gas and expenses. If it comes to it, just get a P.O. box. Make my employer to perform direct deposit into my account.

As far as I'm concerned, I can live without the Cell phone. I can survive off Ramen Noodles and Campells chunky for a while or until I make more in another city as plan lay out.

However...
I don't understand your numbers. You say your income is $10/hour for 100 hours a month = $1000 a month.. what about taxes?
What state are you registering the MH in? You say $132/month ($1,584/year) for rig insurance. I live in NJ, the state with just about the highest insurance cost in the nation, and I paid only $350 a YEAR to insure my Class C last year (I have since sold it)
I agree with the poster who said dump stations may be an issue.
Your food budget at $50 a month... That gives you about 1.5 cans of Campbells Chunky a day...
IMHO, you could do a lot better than $24K for a good used Class C if you are careful. With a little work and patience you should find a well-maintained late 1990s coach for $8-10 K
Of course, the big X factor is whether you will be able to find that 100 hours a month at $10 an hour in this economy, especially since you need to find that job every fer months to a year when you move. There are likely to be large gaps between moving and landing the gig. Do you have the reserves to handle it?
All that being said... Good luck and keep us posted. I know many here dream of just packing up, hitting the road, and never looking back.

This reminds me of when I was 18 and wanted to but a new Chris-Craft speed boat. My older brother pointed out that with the loan payments and my current expenses I wouldn't have enough money to buy gas to run the boat or even have enough money left to get a haircut which cost about 50 cents then. He said "What are you going to do, anchor the boat offshore and just look at the pretty girls on the beach?"
