There's really only one use for an RV oven - and thats to dry wet shoes.

From my perspective I think oven use depends on your camping habits. If we were only using our rig on weekends and a week here or there, we might not use it much either. But since we spend 3 and 4 months at a time in our rig, our oven gets used a lot! We enjoy variety in our meals and the oven helps us achieve that. I'd never have an RV without one.

Use the oven and do not use the microwave.
Fresh cinnamon buns here too, plus biscuits, pizza (homemade dough) lasagne and more.
I love to cook outdoors and do most the cooking outside (dry camping), but no oven would be a deal breaker for us.
Have not made cookies on the road, but will make up some dough and freeze it for the next trip.

I would be torn without it... But in all honesty, I've only fired it up twice in the 22 months that we've had the camper.
I like to cook outside! I grill, or plug in an electric griddle for doing pancakes, and we have a 2-burner gas cooker for steaming oysters, low country boils, etc... Even though we have a refrigerator inside...we always keep a cooler full of beverages handy outside.
I would miss not having the option of baking a pie or bread in the oven though. There are just certain things that a microwave can't do well.

1 year with a TT. 10 years with a Class C. we used the oven exactly 2x.
New Class B has no oven.
Alaska is next! Still trying to fit the pontoons to the RV so We can get to Hawaii!

We use our oven actually as a wine rack and storage for tin foil rolls etc.
alot of people are full timers and they bake. they use an oven just like in a home of course 
I use mine and I camp whenever. I reheat meals I brought from home. baked spaghetti or lasagna goes right into the oven. delish dinner.
USE the oven. It makes fast homemade meals. I use my oven for biscuits in the morning and use it at night for dinner situation.
I use my oven every single time we camp.

We use the oven all the time. Cook same things we cook at home. Would not buy an rv without oven.
