45+ years as RV'ers, and we have had an "Oven" in every RV we have ever owned. And we have used the Oven in every one of them.
Our Ovens get more use in the Winter than in the Summer though. As we use our RV's On/Off all year long. And for Summer use, it just depends on how high up we are, and what the weather is like.
We have always done more Boondocking than anything else. Everything in or on our RV's have always been used.
What good is it to have items if your not going to use them ?. Thats part of the "Beauty", of owning a "Fully Self Contained RV".
Theres really nothing I can't cook, or Bake, in the RV, that I don't cook in the House also. Since I do all the cooking anyways.
I used to have an old (1969) truck camper that had an oven that actually worked.
Our TT has a cheap oven and range that always burns one side of the bisquits and can't accomadate a whole chicken. Pretty much useless! Sometimes I use it to keep pancakes warm while I scramble some eggs.
We are looking at a new TC that won't have an oven.
