Not true with the Hypertech which stores your old settings when it applies the new ones. Users can elect to have the device upload the old flash settings before they visit the dealer and then change them back afterwards.
For my part I believe that there is no such thing as a free lunch. Boosting the horsepower comes at a price in possible increased engine wear and probable increased transmission wear. I have too much invested in my truck to take the chance for a 5% power gain that I do not need.
There is a good reason why the Hypertech and similar tuners are sold predominately through speed shops and not truck and RV outlets.

Mine serves me well. I know I don't have the same truck as the OP but in addition to providing a small increase in mileage (I get about 17+ mpg around town mostly freeway at 65 / and once got 25 mpg on a rolling country road, although 22 mpg is more likely on the highway -- all on regular gas) there is a supposed increase in power. Butt dyno could not tell, but in my engine it occurs at revs higher than I tend to drive at. Mileage gains while towing are more modest. My typical mileage on the highway is just over 10 mpg and I have hit 11 mpg before. Cannot say for sure if it is due to the programmer but I have no complaints abvout power. In all cases I have only used it so far on Regular gas with the Regular tune.
On top of that there are other adjustments that the programmer can perform aside from mileage and HP. IMO -- worth every penny.

Go to a Powerstroke Forum and check around there. RV guys aren't the ONLY ones that tow heavy loads.

LOL, I really doubt an 03 6.0 will have any warranty left to worry about.
The OP will be the one paying for blown head gaskets or TTY bolts when they pop.
As far as the dealer selling you a tuner. Go see if that dealer still sells tuners; or for that matter is still in business.

Yes, they are still on business. They just sold my Dad a Superchips Flashpaq for his 2010 Powerstroke. Franklin Ford, Franklin NC.

They pop without any help...best mod for any 6.doh is a Cummins swap or a big FOR SALE sign.

I agree. My point was that programmers don't ALWAYS void the warranty.
BTW, I am using a Hypertech on my Duramax. Slight mpg increase, definite power increase. Can tow on any level, but I wouldn't tune a 6.0L Powerstroke.
Programmers aren't easily detected. They don't leave ghost codes like the older tuners did. One of the only ways to see if it was tuned is to tear the engine down and look at the spray pattern. If a low or moderate tune was used it would be hard to tell if the truck was tuned or just towed heavy loads.

2008 is the break year when Ford made a major change in the Owners Manual that made it clear they are monitoring data from the ECM and will use it against the owner at their discretion.
There is no way a tuner can NOT be detected with 2008 or later technology on any Ford, GM, Chrysler vehicle.
The question is whether the OEM will allow the repair (not the dealer) or not.
So far, most of the answers is no.
People who have warranty coverage denied tend to slink away with their tail between their legs, and not come out on forums to brag about how their toy mod voided their warranty and stuck them with a $10k plus bill.
If you still insist on believing that the OEM cannot tell, go ahead, mod it, blow the engine, and come back and tell us about the warranty fix you got for free --- including your VIN number.
Let me see how fast the OEM can bounce the repair bill and stick the dealer with it.
Oh.. the tuner will not void the warranty on the paint job.. or the windshield wipers... but the powertrain... lol.
