According to stateparks.com Louisiana has 2 state forests, 1 national forest, and a bunch of state wildlife management areas. Can you just go in the woods and pitch a tent or are you required to stay in a campground?

It's best to check with the management of those specific areas. Generally, "dispersed camping" is allowed in most national forests, but is likely limited to specific areas within the forest.

From what I know yes but Ive never asked, just did it. Then too some of the campsites can be primitive enough.

State Forests are managed by individual States, so as stated, check State rules.
By nationwide policy, National Forests are open to "dispersed camping" UNLESS otherwise stated by the local Ranger District. And since restrictions can be imposed/altered any time, always check with the District Office before going out.
I roughcamp a lot in National Forests and even if I know in advance that an area's "open", I always check in with the local ranger- they're a fount of info per road conditions, etc.
It's also nice to know that somebody has an idea that I'm out there...one never knows when one might need to be "found"!
Note:
National PARKS are a different jurisdiction and a whole different story.

Some areas have special limit. You should check before setting out.
Hate living in the house which is like a box.
So I like Tent Camping.

I agree with the need to check with management locally.
Keep in mind that where you can camp may be different than where you can take a motor vehicle, particularly in national forests.
In a WMA here, we may not be able to camp, but we might stay all night in a blind. Access may be limited by hunting seasons and licenses. But Louisiana could do things differently.

Free dispersed camping (boondocking) is available on National Forest lands in Louisiana.
Looks like you can do it in the National Forests in Louisiana. I don't know about the State Forests.

I'd check first with the state. I once just set up a tent in the woods without asking, and was confronted by authorities. I was told to pack up and leave.
