Any idea how long it takes for poop to break down in our tanks?

Not sure it does "break down." These are holding tanks, not septic tanks with drain fields.
Break down is a result of enzymes.

Why does it need to "break down"? - your tanks are a holding facility - NOT a septic tank. Personally, I'd rather dump at the campground, even if things are still "whole" - than go driving down the road with a full black tank, trying to make like a macerator.....

i think maybe you don't have the needed info..you need to have maybe 5/7/10 gallons of water IN the tank, before you start the camping thing. Then, all the 'material' becomes liquid. Prior to actual dumping, use the rinse access to put more water in..adds to the volume and thus pressure, eh...and then, when you pull the handle? whhhoooooosh...it all just flushes out. Then you do a couple more close, fill, open..just to clean out the bits. Done deal. I always leave the dump station with water IN the tanks. Even if being parked for a week or two...keep residual stuff from drying and caking.THIS you do not want. Not Ever.

I thought that the chemicals you put in broke down the poop into a liquid.

I don't use any chemicals, AFAIK, all they do is cover up the odor with a more pleasant odor. If you have no unpleasant odor there is no reason to use chemicals.

Mine is on meds so it seldom has a break down.
