I bought a nestable set with removable handles off of QVC for less than $100. And I carry cast iron dutch ovens for cooking outside. Those usually go in the covered bed of the truck in protective bags.

One large granite-ware stock pot.
One cast iron griddle.
3 cast iron dutch ovens (sizes 10, 12, and 14
One large cast iron fry pan.
One small cast iron fry pan.
All the cast iron is seasoned which makes it a natural non-stick surface. PS: My entire set cost less than $40.
I love cast iron for camping, but I have weight issues with the RV/Astro Van combo, so it was out for me. The Cuisinart isn't exactly light, but definitely not as heavy as cast iron.

We can carry the cast iron because we don't carry a lot of other things like bikes or other items we don't consider essential so the weight's a wash. That 14" dutch oven doesn't go on half the trips but it certainly gets stowed in the RV when we go to a dutch oven gathering (D.O.G.)
Your Astro Van doesn't have the tow power of our Ford 450 so that's a difference there too.
To each their own. It appears that it was just a "curiosity" thread from the OP and meant for sharing ideas and lifestyles. I don't think anyone was trying to sell you on a particular set up although there are salespersons who do come on this forum to try to sell you something. Caveat emptor.
First law of science: don't spit into the wind.
Keep on rollin'!

I didn't take it as a sales pitch at all! Just a fun discussion, as I am the OP, and have a passion for cooking gear of all types!

I got it on Amazon. Just do a search there for Cuisinart Stowaway cookware, and you will find it!

I really like using Hamilton Beach 9 inch Soft Touch Tongs and their 12 Inch Tongs as well .... I like the way they can be locked open and closed with one hand and that the locking mechanism isn't plastic
