Jerome is one of the most vertical towns I've seen...definitely worth a visit. The one-time mining town billed itself as the wickedest city in the west, but I think every old mining town said the same thing about themselves.

A nice CG to base your explorations of the area from is Dead Horse Ranch State Park in Cottonwood. It is about 20 miles south of Sedona and sits right at the foot of the mountain that Jerome clings to. Old town Cottonwood is a must see as well.

Lots of good information already provided. A couple of attractions I don't think have been mentioned yet are The Verde Canyon Railroad, the V bar V Heritage Site, Palatki and Honanki Ruins, and Montezuma Well.

There are a number of nice RV parks in the Cotonwood/Camp Verde area including a Western Horizons and a Thousand Trails/Encore park if you have access to those systems. Zane Grey and Clear Creek RV Parks are East of Camp Verde and a little further from Sedona, but offer a lot of shaded sites which is rare in the area.
